I love to bake, but summer baking turns my kitchen into a Sauna. Although I can buy sweets at the bakery, it has its cons. One, it cost more to by baked goods than making them from scratch. Two, I can’t modify the recipe. Three, the pastries shelf life is questionable. Since, I cook most of my families meals, it’s hard to avoid a sweltering kitchen. To limit how hot my house gets, I like to make these no bake dessets for the summer.
Chocolate Chip Rice Krispie Treats

Pre-packed Rice Krispie Treats are available in most grocery stores. I prefer to make my own. The recipe is easy. These homemade treats are very sticky.
Ingredients
- 3 Tbs of butter
- 16 Oz Mini Marshmallows
- 6 Cups of Rice Krispie cereal
- 1/2 Cup of Semi Sweet Milk Chocolate Chips q(brand of choice)
- 1/2 Cup of Peanut Butter (Optional)






Directions
- I used my stove top, but microwave can gradually melt the butter and marshmallows, too.
- Once the mixture is smooth, I add cereal.
- Most Kelloggs Rice Krispie Recipes call for 6 cups.
- Then, add 1/2 Cup or Semi-Sweet Chocolate Chips
- Using chocolate chips stored in the freezer will slow down the melting process.
- Finally, I spoon the mixture into the pan and press it down.
- In my experience, the non-stick spray makes the marshmallows gummy. If you don’t have aluminum pans, don’t go to crazy with non stick spray.
These are tasty, but they don’t have a long shelf life. If they are left on the counter in a sealed container, they should be consumed within 48 hours. I prefer to put them in the fridge after they’ve cool down. It makes them easier to cut and serve to my family.
