If you’re more of a skimmer than a grocery list shopper, you may have noticed a few novelty pancake mixes in the cereal aisle of your local grocery store. In my experience, grocery stores like to mingle pancake mix with oatmeal, toaster pastries, granola bars. A variety of cereal options are directly across from them. About three years ago, my husband and I spotted a box of Pillsbury Funfetti Pancake & Waffle Mic. It wasn’t in the breakfast aisle. It was more like those random displays that disrupt the flow of traffic. I have a history of baking seasonal and regular Funfetti mixes. We figured why not see how these pancakes come out.
First Impression
First off, the mix smells like Funfetti cake. This tells me two things. One, this will probably taste like Funfetti cake without icing. Two, this mix isn’t as simple as adding sprinkles to box mix or pancake mix made from scratch. I followed the directions and ended up with thinner pancakes, then expected. From a packaging perspective, the box is a bit misleading. However, I don’t knock the mix for that. Thick or thin pancakes are really up to the cook. That’s simply using less water for thinner pancakes or more for thicker. It’s likely the suggested measurements appeal to the average pancake preference.

Pricing
For the amount of mix to cost ratio Pillsbury Funfetti Pancake Mix stays in the average range of other name brands like Hungry Jack, Pearl Milling Company, Krusteaz, Mrs. Butterswoth, and so on. Getting a box every once in a while shouldn’t disrupt food budgets.
Follow Directions
Through trial and error, I prefer to follow the directions. If you go with thicker pancakes, you’ll run out of mix faster. The density will throw off its fluffy texture. Plus, their harder to cut. These thinner fluffier pancakes are easier for my husband to eat at work and my kids to eat at home.

Final Thoughts
Like any processed food, I don’t recommend buying this Funfetti Pancake & Waffle Mix on a regular basis. If you’re the type to celebrate birthdays from sunup to sundown, consider letting Pillsbury start the day off right. I cannot speak for the Pillsbury Funfetti Unicorn Complete Pancake Mix, but the regular blue box Funfetti is yummy.
