One day, I was sitting in my kitchen booth thinking about more ways to eat raw vegetables. Growing up, I was raised to finish my vegetables. Some dinners were harder than others. During my college years, I realized prep or lack there of impacts the taste and texture of vegetables. Meaning, certain vegetables are better boiled, steamed, sauteed or raw. Knowing your preference makes it easier to have 2 to 3 servings a day.

I like tomatoes. They are refreshing to me. Plus, they play well with other foods. I make an effort to keep some form of tomato in my pantry. You all indirectly reminded me that my husband wants me to make stewed tomatoes with homemade mac and cheese. Thanks for the reminder! No promises on when that’ll happen, but I’ll let you know how it went.
As I sat in the kitchen, I recalled a childhood memory. I used to eat tomato sandwiches on warm days. That memory stuck with me, because. I was wondering what happened to the rest of it. When I hear sandwich, I picture savory and sweet sandwiches. There’s the classic PB&J (I prefer jam over jelly) and the trio (meat, cheese, and veggies). Let’s not forget grilled cheese sandwiches.

Getting back on track, I didn’t realize tomato sandwiches were a summer staple recipe. Enjoying a tomato sandwich does not mean your on a health and wellness journey. In fact, I like to eat mine with condiments. Still, it has potential to be a low calorie meal. Most of the calories come from bread and spread. Not the tomato. See what I mean below:
Tomato Sandwich Recipe, One Serving

- 2 Slices of White Bread
- 2 Tbs of Hellmann Mayonnaise
- A Dash of Table Salt
- A Dash of Black Pepper
- A Beefsteak Tomato
- Cut steak tomato into quarter inch slices.
- Set 4 to 6 slices to the side. Place remaining slices in a tupperware container.
- Put two slices in toaster. Toast to you preference.
- Add salt and pepper to taste.
- Spread mayonnaise on toast.
- Layer tomato and top with toast.
- Cut (in a diagonal) and enjoy!
Truthfully, this is a very light sandwich. I recommend pairing with soup. If you prefer to graze throughout the day, one tomato sandwich with a beverage is a satisfying small meal.
